Taco Soup!

Deanna at Momgineering posted a blog about taco soup I made for the ladies at work last week. I thought I would put some pictures up since it was my very first meal to make in my new apartment! =)
This is the condiment plate.. I've been watching a little too much Iron Chef America.. I was going for presentation.. hehe.this recipe makes A LOT OF SOUP as you can see...
but, the finished product is AMAZING!This was so yummy and so easy! I highly recommend it!


And of course, we had to have margarita's and that was Chris' contribution to this wonderful dish!!!!
THE RECIPE:
This soup is really good and easy. Just brown the meat and then add everything else and simmer for about 20 minutes. You can serve it with grated cheese, sour cream, guacamole, and chips. It makes a HUGE pot of soup.
2 lbs ground meat (you can use beef or turkey - both are good)
1 can rotel
2 packages taco seasoning
2 packages hidden valley ranch dressing mix
1 big can diced tomatoes
1 can navy beans
1 can black beans
1 can pinto beans
2 cans shoe peg corn
2 cans water

I made this soup on Sunday (yeah, 6 days ago). I've been eating on it all week! Hubby and I each had two bowls on Sunday, then I've had it for lunch every day this week. I'm down to my last serving today. It's THAT good!!
